In the quiet mountain forests of Molino Norte, nestled within Nicaragua’s Matagalpa region, coffee grows in harmony with cloud cover, cool breezes, and the steady rhythm of the land. At altitudes ranging from 900 to 1,590 meters, smallholder farmers nurture resilient varietals like Yellow and Red Catuai, Catimor, and Parainema in clay-rich soils that hold both moisture and mineral complexity.
Each harvest begins with care—handpicked cherries are fully washed, then fermented for 12 to 14 hours to refine flavor and clarity. Finally, the beans are dried on a mix of patios and raised beds, allowing sun and airflow to develop sweetness and structure.
The resulting medium roast delivers a graceful, well-balanced cup. Expect rich cocoa depth, delicate floral aromas, and a lift of bright citrus that dances on the palate. It’s clean, layered, and quietly elegant—perfect for those who savor nuance without sacrificing warmth.
