From the ancient highlands of Chiapas and Oaxaca, where rugged mountains meet dense forest and tradition thrives in every hillside village, comes a coffee steeped in heritage. At altitudes of 900 to 1,000 meters, small-scale farmers cultivate heirloom varietals like Typica, Criollo, Bourbon, Mundo Novo, and Caturra in clay-rich soils that hold centuries of agricultural wisdom.

These southern regions of Mexico are known for their biodiversity and deep cultural roots. After harvest, the beans are fully washed to reveal their true flavor and sun-dried with care, bringing out natural brightness and warmth in equal measure.

The result is a medium roast that balances the familiar with the surprising. Rich chocolate anchors the cup, accented by warm cinnamon spice and a crisp hint of green apple that gives it a refreshing edge. Smooth yet layered, this coffee is both comforting and subtly complex.
