In the misty highlands of Marcala, La Paz, where the mountains touch the clouds and tradition runs deep, over 1,500 grower-members of Café Organics Marcala cultivate coffee with extraordinary care and purpose. Grown at 1,300 to 1,700 meters in clay-rich soil, this community effort produces a cup that’s as grounded and soulful as the people behind it.
The diverse mix of Bourbon, Catuai, Caturra, Lempira, and Typica varietals brings complexity and balance to the profile. After harvest, cherries are fully washed to emphasize clarity and character, then sun-dried, allowing natural sweetness to intensify under Honduras’s golden light.
The result is a medium-dark roast with warm, inviting depth. Notes of caramel and brown sugar provide a sweet, rich foundation, while a hint of gentle spice gives it a lively, comforting finish. It’s a cup that feels both familiar and distinctive—bold yet beautifully composed.
